Marinated Tomatoes

These marinated tomatoes are peak-summer simplicity. Juicy tomatoes get tossed with garlic, olive oil, red wine vinegar, and fresh herbs, then sit just long enough for everything to mingle.


They’re delicious on their own, but even better spooned over whipped ricotta, toast, grilled bread, or anything else that needs a little tomato magic.



Yield: About 3 cups

Servings: 4-6

Total Time: 2-3 hours, including marinating


Ingredients

  • 1 pound tomatoes, halved or quartered

  • 2 garlic cloves, grated

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon red wine vinegar

  • ½ cup chopped fresh herbs, such as basil, parsley, and chives

  • Kosher salt

  • Freshly cracked black pepper


Instructions

  1. Add the tomatoes, garlic, olive oil, red wine vinegar, and herbs to a large bowl.

  2. Season generously with salt and black pepper and toss gently to combine.

  3. Cover and refrigerate for 2–3 hours to marinate.

  4. Taste and adjust seasoning before serving.


Serving Suggestions

Serve with:

  • Whipped Honey Ricotta

  • Crostini

  • Burrata

  • Grilled bread

  • Pasta

  • Grilled chicken or fish

  • Avocado toast

Storage

Store in an airtight container in the refrigerator for up to 3 days.


The tomatoes will get softer and juicier as they sit, which makes them especially good spooned over toast or stirred into pasta.

Maddie's Tip

Let the tomatoes come back toward room temperature before serving. Cold tomatoes can taste muted, so giving them 15–20 minutes on the counter helps the flavor wake back up.
