Kate's Curry Dip

This curry dip comes from my friend Kate’s grandmother, Grammer, and has a slightly scandalous origin story. After years of trying to get the recipe from a favorite St. Louis restaurant, it eventually made its way into Grammer’s hands under strict orders of secrecy. Thankfully, Kate decided recipes this good are meant to be shared. Creamy, herby, tangy and warmly spiced, it’s the kind of dip you’ll keep coming back to—and absolutely one you should measure with your heart.

Total Time: 10 minutes, plus optional overnight chilling


Ingredients

  • 1 teaspoon fresh dill, finely chopped

  • 1 tablespoon fresh chives, finely chopped

  • 1 tablespoon grated onion

  • 1 garlic clove, minced or finely grated

  • 1 cup mayonnaise

  • ½ tablespoon fresh lemon juice

  • ½ teaspoon Worcestershire sauce

  • ¼ teaspoon paprika

  • ½ teaspoon curry powder


Instructions

  1. Finely chop the dill and chives. Grate the onion and garlic using a Microplane or fine grater so they incorporate smoothly into the dip.

  2. Add the dill, chives, onion, garlic, mayonnaise, lemon juice, Worcestershire sauce, paprika and curry powder to a medium bowl.

  3. Whisk until everything is completely combined.

  4. Taste and adjust as you go. Add more onion, lemon juice, herbs or curry powder to your liking. A pinch of turmeric is also a great addition if you want a little more color and earthy flavor.

  5. For the best flavor, cover and refrigerate overnight before serving. If you don’t have that kind of foresight, it’s still delicious right away.

  6. Serve chilled with fresh vegetables and crackers.

Serving Suggestions

Serve chilled with a mix of crunchy vegetables and crackers. Carrots, celery, cucumber, bell peppers and radishes are all great for dipping. For crackers, buttery crackers are especially good here—Kate’s family swears by Pepperidge Farm Golden Butter crackers.

Storage

Store the curry dip in an airtight container in the refrigerator for up to 4 days. In fact, it gets even better after it sits—the extra time gives the herbs, curry and aromatics a chance to meld together. Give it a good stir before serving

Maddie's Tip

Measure with your heart. This is not a recipe that demands precision. Taste as you go and add more lemon, herbs, onion or curry powder until it tastes right to you. I also like adding a pinch of turmeric—it gives the dip a little extra earthiness and that signature golden-yellow color.
